Chorizo (Vegan) Sweet Potato Tacos
You can have Chorizo & Papa tacos anytime of the day, I don't think there is a rule for that! I hope not... I made these Tacos Vegan, but of course you can always substitute to chorizo (pork sausage)
I was a little scared I am not going to lie, I had been hesitating to make this dish because I just couldn't see myself eating a soy chorizo somehow it just didn't seem right. I tried it and I fell in LOVE. Oh and it was approved by my parents so that should tell you something!
I have noticed that meat markets are starting to carry a lot of soy products. Also a lot of Taqueros (Taco Stands) in Mexico City are recreating the Vegan Taco marinating their Soy with their own special ingredients. Luckily I found a Soy Chorizo that is full with flavors from Trader Joe's I have also seen the Cacique Soy Chorizo if you do try it let me know how you like it!

There is times I get tired of eating meats, am I the only one? I love cooking Mexican recipes that are meatless, you can get creative and plus it is affordable to make especially when you are having big events. Trust me you don't even have to tell any of your guests your tacos are vegan they taste just like chorizo! Chorizo in Mexico is way different than here and I believe it has to do a lot with flavor and how they season the chorizo. And let me tell you I don't know what Trader Joe's did but this soy chorizo is full of flavor you can trick the kids with this one! I am sure that is always a big win!
Also any leftovers you can add a couple eggs and make breakfast burritos! 2 in 1 dish! :)

Makes about 8 Tacos Add more veggies for a bigger party!
Ingredients
- 6 oz Soy Chorizo I used Trader Joe's Chorizo or you can use Cacique Soy Chorizo
- 1 Red Bell Pepper
- 1 Med Tomato
- 1/2 - 1 Med. Sweet onion
- 1 Jalapeño Pepper
- 4 Small Sweet Potatoes (2 med sweet Potatoes)
- Salt to taste
- 1 tbs. Olive oil
Toppings
- Corn Tortillas
- 4 Limes
- Salt about 2 tsp
- 2 Jalapeño Peppers Sliced into thin rounds
- 1 Med Red Onion Sliced into very thin rounds
- 1 Large Avocado
Utensils
- Large Frying Pan
- Spatula
- Food Storage Container
- Cutting Board
- Knife
Instructions
- Start by preparing your pickled onions and Jalapeños. In a Food Storage Container add the Sliced thin round Red Onions, Jalapeños sliced into thin rounds and Salt. Squeeze the 4 Limes. Seal your container give it a little shake and let it sit room temperature for about 1 ½ hours.
- Cut up all Vegetables. Red Bell Pepper, Tomato, Sweet onion, Jalapeños and Sweet Potatoes (peel first)
- Place a frying pan over medium heat and add the oil. Once the oil is hot add the Sweet Potatoes cook them thoroughly (I cut them thinly to cook them fast) Once sweet potatoes are fully cooked add Red Bell Pepper, Tomato, Sweet onion, Jalapeños and salt to taste about 1 pinch. Once vegetables are cooked for about 5 min add the Soy Chorizo (half of the packaged 8 oz) The chorizo will take another 8 minutes I do leave mine longer for a more crispy chorizo.
- Cut up your avocado in thin slices
Tip
I love cooking my Tortillas over the flame burner to have a chard taste, but you can use a Comal (cast iron griddle) you can make so much in one of these! Quesadillas, Tortillas and also toast your Peppers! http://amzn.to/2Hm6JhN
Assembling the TACOOO
- Cook your tortillas over flame burner or a Cast iron griddle
- Add the filling, top it with the pickled Red Onions and Jalapeños and a slice of avocado.
