Tortas De Panela Y Jamon






These Tortas are so easy to make and so delicious! They are perfect if you are having a small snack table for a baby shower, bridal shower, or a buffet for your guests! You can serve them as a whole or half! 
My dad taught me that when you cut a torta you always cut at an angle and always get a good bite. Me thinking, "Here you go again with the theory's!" I tried it, I didn't realize the difference this makes! I mean especially when us ladies are wearing lipstick or you guys get food on your mustache!
  
I love when I go get Tortas from a Taco Stand in Mexico, they have an oven to get them toasty and crunchy! But in this case I will be using my cast iron griddle.

I know, I know you don't add diced onions or cilantro to your Tortas! Maria has already told me that, Maria is my mother. I call her Maria because her name is also Carmen like mine but that is her second name. So maybe these are not Maria approved but I know she will love them!  I explained to her that when I go to the Taco Stands to get Tortas I ask them to add the diced onion and cilantro to my Panela Tortas, or maybe I just love the combination of both together. I just want to share with you guys! But if you're not a fan just add slice onions. And evertything will be OK! :) 

You can combine ham and panela or just make one of each! I mixed and matched mine. Just incase your guest are not a fan of ham or cheese. If they are not a fan of cheese...why are they there... :)

(You can find pan bolillo in a Meat Market or Panaderia)



Servings: 8 Whole Tortas If you mix match the ham and cheese this recipe can serve 16 

Ingredients

  • 8-16 Bolillos 
  • Mayonnaise to spread on Bolillo bread 
  • 8 Slices of Ham cut in half
  • 1 lb of Queso Panela cut in to 16 slices
  • 1 large Avocados slice into 16 slices
  • 2 Large Tomatos
  • 1 small diced onion
  • 1 cup of chopped cilantro
  • 4 whole Pickled Jalapeños
  • Vegetable oil 
Utensils:

Directions:

  1. Slice your Tomatoes, Avocado, Panela Cheese, and Ham. You can slice the Jalapeños in rounds or serve them whole on the side. My favorite brand to use is La Costena Green Pickled Jalapeños. Dice onions and cilantro. 
  2. Cut the Bolillo (Picture Below) by placing it down on the cutting board cutting it open (Butterfly) spread Mayonnaise on both sides of the bread. This will help toast the Bolillo.
  3. Put your Cast iron on Medium heat. Spread the oil on the cast iron with a paper towel, almost as if you were wiping down the pan. To avoid Burning the bread. Add your bread to the cast iron with the mayo spread down. Once the inside is nice and toasty continue adding the rest of the Bolillos.
  4. In a large pan add a small amount of oil on medium heat to cook your ham and Panela Cheese. Once both sides are browned add them to your Bolillo bread.
TIP: If you do not own a Comal (Cast Iron) you can always toast the bread in a large pan. 

Assembling the TORTA:
  1. Add your Panela Cheese and ham to your bread. Here you can get creative add a combination of cheese and ham to one or make one of each. Also when you mix and match your servings will be have more servings which means you save $$$. 
  2. Add 2 slices of tomato 
  3. Add 2 Slices of avocado 
  4. Add the sliced Jalapenos
  5. Add Onion and Cilantro
  6. Now close and Cut in half, and remember follow the theory. Cut at an angle  ;D 


These Tortas are so easy to make for your fiesta theme party! And saves you so much money! and no they can not say you served sandwiches... but Mexican Tortas!  
To Display, you can use your wooden cutting board to place the half Tortas! 
If you are afraid they will get cold meanwhile your guest arrive or get the kids at the dinner table. 
All you have to do is just place them in your pan or cast iron with low heat and actually they will be more toasty! Which is not a bad thing :)
