Molletes


I decided to make an easy brunch for Mother's day! 
Molletes are delicious and so easy to make I love beans with pico de gallo and cheese I could eat that everyday! That's the one thing I cant wait to eat when I get to my grandmas house. Her fresh tortillas with beans, home made cheese and salsa... Okay I need to stop here! But nothing compares to this comal. It just makes everything taste so good! Now a lot of Mexican homes have a stove in their kitchen but they have this one outdoor. Eating outside next to the fogon is priceless. The most simple foods are the best. Just make them with love and a smile!

Here the oven will do all the work for you, a big plus if you ask me! Then just add the colorful veggies on top. You can make this dish with any kind of beans by far my favorite has been the black beans.




Steps in Pictures (See instructions below)


Cook beans with onions 

Cut in half










                          Add refried beans 











Add Oaxaca Cheese 

Bake for 10 min at 400 and broil for 3 min



Add toppings! 




Servings: 8 Molletes


Utensils:



Ingredients
  • 4 Pan Bolillos
  • 3 cups Black Beans or 1 can of refried beans 16 oz
  • Vegetable Oil 
  • 12 oz Queso Oaxaca
  • 1/2 Cup of Mexican Crema or Crema Salvadorena 
  • 1 Avocado 
  • 2 Roma Tomatoes
  • 1 cup Chopped Onion
  • 1/2 cup Cilantro 
  • 1 fresh Jalapeno Pepper 
  •  1/2 of a Lemon Juice
  • 1 tsp of salt 

Directions:

  1. Preheat your oven for 400 degrees 
  2. Heat the oil in a frying pan on medium heat
  3. Add 1/2 cup of of chopped onions cook until golden brown then and the beans.
  4. Note : I always mash down my beans first before adding them to the oil. You can also mash the beans in the frying pan with the onions :)
  5. Add a pinch of salt when you mash the beans you would want to add about 1/4 cup of water so they don't dry while cooking. 
  6. Cut your bolillo bread in the middle (Picture above)
  7. Place them in a baking pan. I add foil to mine for a easy clean up! 
  8. Add the Oaxaca Cheese on top 
  9. Then stick in the oven for about 10 minutes you don't want your bread to burn 
  10. Set your oven to broil for about 3 min to make your cheese brown a little :) 
  11. Means while your molletes are in the oven you can make your pico de gallo
  12. Chop up tomatoes, cilantro, jalapeno pepper, lemon juice, salt, and add the rest of your chopped onion. Mix all together
  13. Once you take out your molletes from the oven let them cool down. 
  14. Add your toppings: Mexican Crema, Pico de gallo, and top it off with some avocado! 
Tips: If this is not spicy for you add Valentina gives it a good taste! I love adding it to the molletes. 
You can have this for breakfast with a cup of coffee! or a coke Remember we are not counting calories on Sunday! ;D
